Taco Tuesday never tasted so good!! My weekend meal prep is paying off big time today! Beef Barbacoa, Pico de Gallo, Homemade Salsa, Pickled Red Onions, served with some corn tortillas and all the hot sauce!

Chicken and Chorizo Paella! Absolutely delicious!

I’m already thinking about Taco Tuesday!! Prepping some Beef Barbacoa to use later this week.
