Today’s Mood: Channelling my inner child! Chocolate Pudding Magic

Today I just felt like being a kid and having a little treat.  When I think back to being a kid, chocolate pudding just said it all.  I remember being a little girl, opening my lunch bag and BAM there was one of those cans (yes cans) of chocolate pudding. The kind where you pull back the lid and find a little pot of chocolate goodness, you lick the lid and hope to the chocolate pudding gods that you don’t slice your tongue open from that damn lid.  Those were the days when my inner voice would yell YES and do an air fist out of sheer excitement for the most awesome 5 spoonfuls that were about to happen.

Now, we don’t have those cans any more which is prolly for the best but I wanted to feel that excitement again so I set out to make this at home.  I like to health it up a bit for my little lion so I decided to make what I like to call PUDDING MAGIC.  Using a few simple ingredients you have at home such as avocados, cocoa powder, splash of almond milk, bit of vanilla bean paste and my blender…I got to feel like a kid again and experience the magic of chocolate awesomeness.

Avocado Blender Pudding

Putting avocados in this pudding makes it uber creamy and gives it a really great feeling of indulgence!

Ingredients Required:

  • 2 avocados (ripe)
  • 2 Tbsp Vanilla Bean Paste (but you could use Vanilla Extract if you can’t find Vanilla Bean Paste)
  • 3 Tbsp honey (you could use maple syrup if you want it vegan)
  • 2 Tbsp Cocoa Powder
  • Splash of Vanilla Almond Milk (unsweetened)

Put everything in the blender.  Oh I guess I should tell you that you have to take the pits out of the avocados even though I think that is obviously but just incase it isn’t…take them out.

Blend until all ingredients are mixed together

Put in to little containers or dishes and let it set in your fridge.

Here is what the finished product looks like!!

Chocolate Pudding

Indulgent Chocolate Pudding Magic!! That’s right, with avocado.

This made me feel like a kid again and was completely awesome.  It tasted awesome and chocolatey.  What was even better is that the hungry little lion devoured it and went a little mental for it.

Tips to parents of picky eaters

Okay first disclaimer…I, in NO way claim to be a parenting expert on getting your kids to eat…in fact I often refer to my very spirited child as a little bit of an asshole (please don’t judge).  If you have a pretty picky eater who after knowing there is avocado in this bad boy, do not let them participate in the making of this pudding or even know what the hell is in this pudding because then the magic that was created will disappear in a nano second and become insanely frustrating for you because they probably won’t eat it.  I have seen this happen and you can pretty much go from hero to zero.  Even if you see them devouring the pudding and you think it’s a good idea to be like ‘Hey Suzie…you like that chocolate pudding huh?  Guess whats in it…avocado!!’ insert a blech face here, followed by a few ‘ewhhh Gross’ and even though they ‘were’ eating it, they probably won’t continue!!  So if your tiny humans fall in to this category, I say keep this little gem a secret, make it when they aren’t around and present them with their treat and a wink when they aren’t looking.

I have a little lion that does really like to help in the kitchen and often takes pride in the things he has created so it does tend to help (sometimes)
