It sure was a busy weekend…wowsa!! Now that it’s winding down and i’m just chillin’ at home with the lion, I feel a sense of calm and comfort because I know the next few hours will just be chillaxing time. Tonight I asked the lion what I wanted for dinner and he said “Apple Pie and Pizza Planet”…me thinks the boy is watching a little too much Toy Story lately! I laughed but then I thought to myself…well, why not? It won’t be a pie, it’ll be a crisp. I have delicious Honey Crisp Apples and I also have blackberries in the freezer from when I went on an amazing weekend trip to the Sunshine Coast and those little flavour bombs were everywhere. Yes, I went on a rampage, got scratched, drew blood and it was worth EVERY SINGLE MOMENT. I felt like a blackberry drill sergeant instructing my doppelganger and her boyfriend to pick more!!
So here it is…apple crisp, the perfect rouse to get my child to have a bath with the promise there will be a treat waiting for him. Insert evil laugh. Preheat your oven to 350 degrees.
First you peel and chop your apples. I chopped up 2 Honey Crisps, which equaled about 3 cups. I chopped them quite small so the lion would love it…he like small food and I like a child who won’t choke so I consider this a winning combination. Place your apples and blackberries in a bowl together and set aside.
Next you are going to make the crisp topping. I placed rolled oats, chopped pecans, cinnamon and margarine (cuz i had no butter on hand…sorry) in a bowl and then squished it in my hands until it was all mixed together
Next mix the fruit together, add a bit of cinnamon, a sprinkle of sugar, teaspoon of cornstarch, tiny splash of vanilla (or vanilla bean paste) and a teaspoon of maple syrup and mix together to coat evenly.

Add a bit of cornstarch or flour so that the natural sugars from the fruit will thicken up in to delicousness
grease a loaf pan, add the mixture. Top with the crumble.*I put the loaf pan on top of a cookie sheet incase there is a bit of a spill over …safety first people.
Place in the oven for about 40-45 minutes until fruit is cooked and bubbling and the topping is nice and golden brown.
Your house is going to smell Ah-MAHHH-Zing!!! Oh and if you want to pretty much guarantee yourself a participant medal for mom of the year…serve it up with a scoop of ice cream.
Blackberry Apple Crisp
*Makes a loaf pan and feeds about 4-6 people depending on how much you scoop out per plate.
Ingredients
Fruit Mixture
- 2 Cups Blackberries
- 3 cups chopped apples
- Sprinkle of sugar
- 1 tsp of maple syrup
- 1 splash of vanilla
- 1 tsp of cornstarch or flour
Crisp Topping
- 2 Cups of rolled oats
- 1/2 cup of margarine or butter
- 1/2 cup of chopped pecans
- 1 teaspoon of cinnamon
Directions
- Pre-heat oven to 350
- Place chopped apples and blackberries in a bowl and mix with the sugar, cornstarch, cinnamon, vanilla and maple syrup. Set aside
- Make crisp topping-Pretty much squish everything together in a bowl until well mixed and you have a crumbly topping
- Grease a loaf pan, place the fruit in the bottom
- Top with the crispy topping
- Bake at 350 for 40-45 minutes until fruit is bubbling and cooked and the coating is nice and golden.
